Chicken Pomodoro

This is seriously one of the easiest meals to make.  It's a great go-to recipe when the cupboards are bare because it only has a few ingredients :)

2 T butter
4-6 cloves garlic, crushed and chopped
1 lb chicken breasts
1 can diced tomatoes
1/4 c Parmesan cheese
1 small zucchini, 1 c chopped spinach or 1/4 c fresh parsley
Fettuccine noodles
Boil water and cook fettuccine noodles.

Melt butter in a skillet.  Brown garlic in the butter.  Add chicken and let cook a few minutes on each side.  Pour in tomato juice from can and cover chicken, letting it steam until cooked.  When cooked through, take chicken out of pan and chop.  Put zucchini, spinach or parsley in skillet and let cook a minute until tender.  Stir in cheese, canned tomatoes and put chicken back in.  Let simmer until noodles are cooked.  Season with salt and pepper.  Serve chicken mixture over fettuccine noodles.
